Huerta takes care of the food and Perez helps run the business, and together they operate out of the original Old Town Pizza location on Sacramento Street.
“When he saw the bricks and the bar, he said, ‘This is what I imagined, this is my dream,’ ” Perez said. “When something is meant to be yours, you take it.”
After researching the gold mining history of Auburn, the couple settled on the Coyote Pizzeria name, which was inspired by the coyote hole mining technique used in the area. The name is a nod to the location’s basement setting.
Asked what sets Coyote Pizzeria apart from other pizza joints, Perez said, “It’s all about the dough.”

The restaurant has had some upgrades since it was Old Town Pizza, notably the expanded bar. Coyote Pizzeria offers sit-down service and has wine and beer on tap.
“Our bar has been busy. People just want to chat it up and drink a beer,” Perez said.
